BIELLA PANETTONE

This Panettone is handcrafted using an ancient natural starter (sourdough). Unlike commercial brewer’s yeast, fermentation with natural yeast is much slower and requires  a more complex artisanal process. Natural sourdough is renowned for numerous beneficial properties: higher protein digestibility, improved dough elasticity, a more intense aroma, and a uniquely rich flavor and fragrance. Thanks to a 5-stage leavening process, the product is exceptionally easy to digest. We offer it in 10 flavors, available either hand-wrapped or in premium packaging.

LITTLE MASTERPIECES OF SWEETNESS

Brusa biscuits are a tribute to the confectionery traditions of our region. Each specialty is crafted so that the simplicity of the ingredients is transformed into a sensory experience of buttery aromas and perfect textures. They are presented in dedicated counter displays for each individual product.

CANESTREJ BIELEIS: two light, crispy wafers enclosing a refined dark chocolate filling.
A “historic” biscuit, it is a symbol of elegance and taste.


BACI DI DAMA: two small hazelnut shortbread pastries (made with TGI hazelnuts) joined in an embrace of the finest dark chocolate. A perfect balance between sweetness and intensity.


PASTE DI MELIGA: made with Italian cornflour and honey for an unmistakable
crunchiness and crumbliness.


TORCETTI AL BURRO: simple, crumbly, and irresistible. The caramelized surface hides a fragrant center—perfect when paired with coffee or a dessert wine.
